Chicken Divan
Makin' this for dinner..
Preheat Oven 350
Ingredients:
4-5 boneless, skinlness chicken breasts, boiled 'til tender and broken into bite size pieces.
One large or two small heads of broccoli, you can also use a package of frozen; steam 'til tender.
1 can cream of chicken soup
1 cup of mayonaise - not salad dressing or Miracle Whip.
2 teaspoons curry power... I love curry, so I use a tad more than this.
1 TBLS lemon juice
Grated cheddar cheese - about a cup
Bread crumbs.
Layer broccoli in 9 x 9 baking pan and then the chicken. Combine soup, mayo, lemon juice and curry powder, spread over chicken. Top with cheddar cheese and then bread crumbs. Bake about 30 to 40 minutes bread crumbs are golden brown and cheese is melted.
I serve with a green salad and toasted garlic or cheese French bread.

That sounds delish - but the mayo is going to add 300 - 360 calories per serving.
I can't eat that.

What about low fat mayo and maybe also using low fat cheese?

No, but I've seen variations of it in cook books. I got it from a co-worker many years ago.
